Sure OK, i have done it all ways and i know which works well and which is difficult.

First ham i smoked i dug a pit and installed a fire flue underground into an old fridge 8' away. Stayed up for 36 hours monitoring the fire constantly it still ran away and melted the inside of the fridge.

Thanks Punkin, I have seen this happen too.
I have actually been on the Journey with my late father and brother in law and between us we worked out a few bugs. Still had issues last time we did some cold smoking, ambient temp was too high so the smoking chamber got above desired temp, nothing melted or burnt though. .
I plan to build a smoke house some time down the track where I can do this consistently. For now I can play with the UDS and the future remote fire box

No worries if you know what you are getting into. Our brothers in the states do this pretty well, they make a box that looks like an out house from plywood.

I have my next one planned out really well, it will be a single door defunct glass door drinks fridge. Smoke box in the bottom with a hot plate, i have the pid controller. I wanted to put a firebox on the side so it could do dual duty but i don't think the insulation in these things is designed with 100+ degree temps in mind.

Just be careful with using fridges some of the insulations and plastics can give off some nasty fume when heated, If it's got a metal liner then just check what the insulation is between the liner and the outer skin. When I used to build them (first job out of high school, early eighties) they used expanding foam for the insulation, may still be the case.

Won't make a difference for a cold smoker at under 80C but do you know if expanding foam is good for !20-160C?

Seem to recall seeing ovens busted up with that stuff in em.

Cancell, mumma google says even the fire rated stuff is good for 110 only.
