Barrel Take 02 - French Saison

Yeast preorder - see list below. Second generation yeast cakes acceptable (and will be available).
Noting Nige has a yeast pre-order closing on boxing day, I figured its time to firm things up on this front. Mainly on the yeast! Brewer list will change no doubt over the coming month(s).
Regarding the current barrel, it will be steam cleaned once we all take our portions from it. We can't totally kill the brett in the barrel though, so let's embrace it!
This beer should turn around quicker than the porter too (I hope) once the bugs get going...

Recipe Planned:French Saison
1012 ish FG (this will then drop further with influence of the brett from the barrel)
66 Mash Temp
5% Wheat (raw or malted)
Target/Magnum 60min addition to hit 23ibu total
Saaz 1g/L at 20 min
Saaz 1g/L at 5 min
Wyeast 3711 French Saison Yeast
30-60sec oxygen optional
Ferment at 24deg then onto your normal practice - keg/cold condition, etc (prior to racking to barrel).
Plan to brew within a month, look to fill the barrel around February/March.
