Barrel Take 02 - French Saison

Yeast preorder - see list below. Second generation yeast cakes acceptable (and will be available).

Noting Nige has a yeast pre-order closing on boxing day, I figured its time to firm things up on this front. Mainly on the yeast! Brewer list will change no doubt over the coming month(s).

Regarding the current barrel, it will be steam cleaned once we all take our portions from it. We can't totally kill the brett in the barrel though, so let's embrace it!

This beer should turn around quicker than the porter too (I hope) once the bugs get going...

Recipe Planned:

French Saison
1050 OG
1012 ish FG (this will then drop further with influence of the brett from the barrel)

66 Mash Temp

85% Pilsner
10% Munich1
5% Wheat (raw or malted)

Target/Magnum 60min addition to hit 23ibu total

Saaz 1g/L at 20 min
Saaz 1g/L at 5 min

Wyeast 3711 French Saison Yeast

30-60sec oxygen optional

Ferment at 24deg then onto your normal practice - keg/cold condition, etc (prior to racking to barrel).

Plan to brew within a month, look to fill the barrel around February/March.

Thanks for thinking of me Ravs. I pulled out of the last one before it began and I am quite confident in saying that distance will be an impediment to my participation in this one. Let's say spot four is available for someone else.

No backup for me, v15 is catching up with me.

On the other hand, if the barrel needs to be high-pressure steam treated, it's welcome to Basket Range and there will be no bacteria and hardly any Brett left afterwards.

@BD and Vortex - you chaps were on the initial list for the previous barrel, so you had first dibs on this one too.

@Wally - my 3 packs are now spoken for, however yeast cakes will be available soon I'm sure.

@Stef - yes mate recipe is fixed. Really happy with my current version in the fermenter so figured lets use that same grain bill.
