Only brewed my first a month ago mate. Went 1 fresh smack pack with oxygen at time of pitching.
Its an aggressive yeast the French Saison.  Last time I made one it went from 1060 to 1003 in about 5 days! That was a fresh pack into 2L starter. The beer turned out awesome but pretty strong. Brad's starting gravity looks good but I reckon they will all get down way lower at the finish.  The yeast is everything to this beer and I used EKG for bittering but you couldn't tell what hop was in there, anything middle of the road floral and spice would be fine in it.

Presumably if we are going to get some work done on the barrel, we'd remove whats in there (and bottle) on a separate day to when we meet to refill it? Or are we just going to take a bit each in a cube and do what we like with it (IE keg, bottle at home?)

I can easily rack the contents to a number of cubes and set aside for everyone to grab their share later. Have a number of smaller cubes given to me a while back from a mate.

Nige had a yeast aside for me but I've managed to grab some from Wally. If it suits you could grab mine from Nige when he is back online.
