No Brett or other bugs ?

It would probably clash with the smoked eel.

Imperial Porter?
Not totally against the idea. But had my heart set on it being a pure RIS barrel.

Ah, after more specific recipe thoughts than general style. Copy. So no Salted Plum Smoothie New England RIS aged on Smoked Eel?
Lol.... no. I do enjoy a good eel smoothie though.
No Brett or other bugs ?
Definitely no. Already got two barrels full of them. Really want to keep this one clean for as long as possible. That relies on every brewer to do their best.
Also fancies pellicles.

Give me enough time to culture up various beard yeasts , hoping I can isolate the pure Gettysburg strain .
Last time I fucked up and cultured the JW Booth strain and that just messed things up

I'm happy with a RIS Dez.

So am I Dez.

Regarding recipe what do people think about crystal malt in a RIS. Niether of the recipes for the DrS barrel I brewed had any crystal which makes sense with plenty of sweetness from so much base malt. However a lot of clone recipes for RIS do have some medium or often dark crystal malt included. Some commercial examples I have tried have a nice toffee component in the flavour. Is this from using some dark crystal malt ?
Do the experienced RIS Brewers here include crystal in their own recipes.

I'm definitely not in the category of an experienced RIS brewer, pretty sure I've only brewed 4 in total. All of which have had crystal, so personally I'm in favour of it.
My best RIS recipe was a bit of a mash up, using up leftovers. Not really one I'd put forward. But we do need something to get going.
If anyone has a great RIS recipe they don't mind sharing, now's the time. Hopefully we can come up with something great.
The following are just thoughts on a recipe.
2 base malts, roast (obviously), brown, chocolate, crystal, maybe some biscuit? Wheat or rye?
High alpha hops at 60 only? Or try and get a late addition to work with the whiskey?
Wy1056 or something English?
Input from anyone appreciated, in the barrel share or not.

Also fancies pellicles.

Ballpark starting gravity?
Just how intense do we want this beer ?
Hops wise id be happy with single 60 addition of something like CTZ or even magnum to ~60 ibu
Yeast maybe Notty ?
6% roast depending on maltster
4% gladfield toffee
2% carabohemian
10% Munich 2
78% coopers ale or other base ale malt .

Pretty sure I'm missing something , choc and rye perhaps

Starting gravity 1.080 ?

If I were brewing a RIS for myself now it would be something like

OG 1090-1095
IBU 80(this will fade in the barrel) from 60min addition

80% ale malt
7% roast barley
4% English choc malt
3% English pale choc malt
3% English C120
3% English C60
Yeast US05
Mash @ 64-65C

Looks a nice recipe Beachy.

My 2c

OG: 1.100
Ibu: 85 (60 min Columbus)
73% Ale
7% RB
5.5% Pale Choc
3.5% Dark Choc
5% Dark Crystal
6% Manuka Smoked
US-05

Smoked just an option for a bit of something different

No offence FF but I'm not keen on smoked malt for this first brew.

Beachy's recipe looks good. I've brewed a few and need to check my recipes and add my 2 cents worth.

None taken. Just putting it out there. I'm happy to go without it (that's if I make the cut!)

My take on beachy's recipe. Maybe bump the og up a little and use heritage crystal for the C60. Agree that the choc and crystal should be english. Although Gladfields could get a look in? I've never used their choc or crystals. Personally I did want some brown malt in there, but happy to sub it out for the heritage.

OG 1095-1005
IBU 80-85 from 60min addition of any clean bittering hop

80% ale malt
7% roast barley
4% English choc malt
3% English pale choc malt
3% English C120
3% Simpsons Heritage Crystal
Yeast US05, WY1056, Wlp001
Mash @ 64-65C
Also fancies pellicles.
