Breakout IPA. 5.9%

The yeast went crazy on this, i took 3mls from a 1272 smack pack and stepped up twice.

550mls of pure slurry. Checked under the microscope for scarring and mutations.

I made a few petri dishes, practicing isolating a pure culture.

It went into the FV clear as water.

All round great brew day.

Brewed for the Barrel I got from Bigdaddy today.  Which I think was from Smurto from Yalumba.  Exciting :)  I don't really know too much about what I'm doing, but skimmed Wild Brews and a little from MilktheFunk.

Some kind of sour/buggy beer to mix with some different fruits later on.
If it's drinkable, I  figure I can break it up into 4 or 5 Corny kegs and referment with Rasberries, Blackberries, apricots, etc later on.

I mashed hot around 72c and added some oats.  Hopefully that gives the Brett and bugs something nice to chew on and doesn't get eaten up by the Belgian yeast early on.

Today was part 1 of 3, 30l to fill the 100l Barrel.  Which I can hopefully knock off over the next couple of days.  Plan on heading to Belair Fine Wines on the weekend to pick up some bottles of something nice  for some dregs to chuck in.

Some photos.

Barrels first fill!

After being soaked for a few days, a little wax to seal up some trouble spots.  Holding nicely!

Wort in it ready to go.

Nice one Jules! You can whack each of the rings towards in the direction of the center of the barrel with a hammer and cold chisel to help tighten it up too.
Cheers,

BD

Aiming for 1.101, got about 1.106. Very happy with the colour, recipe was bastardised by what I had on hand.

Pitched with 2nd gen GY054.

Dunkelweizen tomorrow.

1272 goes really well in a JFB.
I have nothing interesting to add here.

Hi guys,

anyone used gigayeast german lager (GY045) in a helles? i usually use 3470. wondering on difference in flavour and any reviews you could offer. may be worth noting; i would most likely be harvesting this and then using in an attempt to make a late hopped helles after the traditional one.
